Mission Variety Organic - COOC Certified EVOO: Butter sweet with a delicate fruitiness. Unlike the non-organic mission oil, this is much stronger but still fruity oil. The Mission olive is the oldest variety in California, having arrived with Franciscan padres in the late 18th century. It is oval in shape and medium in size. The skin turns deep purple but changes to jet-black when ripe and the flesh is very bitter but firm. Ripening rather late this is the most widely used olive for cold-pressed oil in California. The trees are vigorous, heavy bearing and more cold resistant than other cultivars. Grown at the old missions in California.
